Our journey to redefine Nepalese cuisine begins with the wild morel mushroom, foraged from the remote Humla Region, and extends to an array of extraordinary native treasures—Dale Chuk (sea buckthorn), wild freshwater eel, Yak dairy products, Mustang apples, Jumla Marsi rice, and many more. These ingredients, carefully selected and respectfully prepared, form the foundation of our culinary artistry.
As I observed the chef and his team at work, it became evident that precision was at the heart of their craft. Each dish was meticulously plated and presented, not as a rushed sequence of courses, but as an orchestrated experience—timed to perfection. Despite the identical menu for each table, the kitchen operated with deliberate pacing, ensuring that every plate reached the guests at just the right moment.
Our table’s courses were prepared and served in a carefully staggered manner, each arriving mere minutes apart. This meticulous attention to timing became even more apparent when our first dessert—Tusa’s signature nettle cake, elegantly finished with a rich jaggery frosting—was presented. Just a minute later, the same dish was placed before the family seated next to us. For the chef, those seemingly brief moments were crucial; had we arrived precisely on time, the delayed arrival of the neighboring table would have significantly compounded his meticulous workflow.

Though the restaurant was less than six months old when I visited, it is only a matter of time before its name becomes synonymous with Nepal’s finest dining. And if that means waiting a little longer for a reservation, I will gladly do so—knowing that every booking contributes to the bright and enduring future of Chef Parashuram and his remarkable restaurant.
